On Clean Monday in the handsome harbour town of Galaxidi, crowds armed with bags of coloured flour descend into joyful battle in the port, reviving a custom traced to Byzantine chariot-racers and later adopted by the town's 19th-century merchant sailors bidding farewell before long voyages.
